Playing on a noodle, we slice the carrots super thin to allow them to retain their nice crunch but be perfectly tender as well.
The softness of the soba noodles and crispness of the carrot plays well together, creating a great balance of textures. Thinly shaved and quickly pan fried the beef then absorbs the sauce along with the noodles.
This dish is quick and flavorful and is a crowd pleaser.
