Our classic cheese ravioli is a staple, and is a constantly changing recipe with a base of ricotta combined with a plethora of other cheeses.
The creaminess of the cheese filling tossed with a tangy tomato marinara that is sauteed with freshly sliced shallot, scallion, capers and crushed confit garlic. Confit garlic, if you've never had it will change your life! We slow cook our garlic in a neutral oil, very low and slow, to maintain a perfect whiteness while transforming the spicy zest of the garlic to a creamy sweetness with just the perfect accent of garlic flavor. Top this whole dish off with some fried crispy onions and you've got richness, tanginess and crunch; you're set for a delicious, quick dinner!
