This dish is a classic and will never get old. Our cornish game hens are beyond the best, pasture raised by Osprey Hill Farm in Acme WA by Anna and Geoff Martin.
The simple technique of roasting the hen, skin side down, weighted, creates a super crispy skin and then rubbed with fresh minced garlic that creates an umami sensation on the palate with it's salty zestiness. Served alongside roasted hearty vegetables and creamy yukon gold potatoes, finished with a minced shallot glace sauce made with house-made reduced chicken stock!
Cook Time 30 minutes(extended time to roasting bird, mostly wait time though while you drink wine)
